Rose’s Anywhere Anytime Dressing
In a restaurant ask for Lemons, and vinegar and a cup to mix your dressing in.
1/3 vinegar
2/3 lemons
1 packet Splenda
Salt to taste
Stir all ingredients and pour over your salad! Enjoy – NO fat or Calories to worry about!
At home your can put this mixture, tomato slices, cucumber slices and some of your favorite spice (mint and basil work very well) – blend it all together and enjoy! You can refrigerate this mixture to enjoy later as well.
Cream Cheese Schmear
Low fat cream cheese, Splash of low fat milk
Add in any or all of your favorites from the following :
Chives, sundried tomatoes, dill, red onion, scallions, smoked salmon. Blend in a blender.
Spread on celery slices or use as a dip with your favorite raw vegetables.
Tzatziki Dip
1 cucumber – Deseed the cucumber and chop it until it is in small chunks, drain of any excess liquid
Add 1 cup non-fat yogurt, dill, 2-3 cloves of garlic, and pepper to taste. Mix well, chill.
Serve as a dip with your favorite fresh vegetables.
Brocolli Soup
1 cup broccoli
Garlic to taste (fresh is best – usually about 1 clove)
1/2 cup fat free chicken stock
Salt and pepper to taste
Blend all ingredients well – microwave for 2-3 minutes or simmer on the stove until hot
Then add 1/3 cup milk or nonfat yogurt. Blend until smooth and serve
(You can substitute 1 cup of asparagus tips (about 7-10 spears) for Asparagus Soup
OR…10-12 cherry tomatoes or 1 regular sized tomato (about a cup) for Tomato Soup
Cold Italian Soup
½ red pepper
1-2 garlic cloves
1 cup fat free chicken stock
Splash of red wine vinegar
¼ of cucumber
Spring of fresh parsley
Blend all well, chill and serve
(You can also pour this over cooked shrimp for a fancy no fuss dish.)
